what's cooking: better than candy salad
Our standard fare for summer suppers is a salad. I just can't get enough of them. And this one has been a big hit around here lately. It combines the wonderful sweetness of strawberries, the tang of vinegar, and the saltiness of feta. Truly satisfying, I tell you!

better than candy salad
8 oz baby spinach
1 pint strawberries
1/4 cup sliced almonds
1/4 cup feta, crumbled
dressing:
2 Tbsp balsamic vinegar
1/4 cup extra virgin olive oil
1/4 tsp paprika
1/2 tsp dijon mustard
1/4 tsp Worcestershire sauce
1 1/2 Tbsp granulated sugar
1/2 tsp salt
1/2 tsp ground black pepper
1/4 cup sliced green onions
Mix all dressing ingredients together and allow to sit for 30 minutes or more before serving. Meanwhile, rinse and dry the spinach and the berries. Hull the strawberries and slice them. Cook the almonds in a skillet over low-medium heat for 5 minutes or so (don't take your eye off of them!) until lightly toasted, then remove from heat.
Just before you're ready to eat, mix the dressing well. Combine all salad ingredients in a large bowl. Pour about half of the dressing (to start)over the salad and toss all ingredients to coat them in the dressing. If you'd like more dressing, if you like.
Now, tuck in to that salad--it's better than a candy bar!

Mmm, I do love salads that combine these kinds of tastes. My fav is one with spinach, mandarin orange slices, walnuts, crumbled bacon, goat cheese, red bell pepper, and a honey mustard dressing. Very nice. But I do have some nice fresh strawberries right now...might have to try this combination!
