This week, I went back to class (teaching class, that is). I've been teaching now for 8 years and it shocks me each fall how exhausting that first week can be. And each year, it seems to get more tiring. Right now, I'm running on adrenaline. Could this be old age? Anyway, I'm still on schedule with the 365. Have a look!

what's cooking: overnight oatmeal

Simple as can be. We'll soon be having those chilly mornings when a bowl of steaming hot oatmeal can be so comforting. Now, I realize that oatmeal's not really a complicated dish, and you are probably wondering why I'm bothering with recipe. Here's why--this dish cooks itself (or rather, the crock pot does the work) while you are getting your coveted beauty sleep. And then you get to wake up to the warm, nutty aroma of perfectly creamy oatmeal just waiting to be enjoyed.

overnight oatmeal
2 cups old-fashioned oatmeal (not instant)
3 1/2 cups skim milk
your favorite toppings: dried apricots, golden raisins, and toasted walnuts shown here

Before you hit the hay, toss the milk and oats into a crock pot and give them a little stir. Cover and set the crock pot to low. Assemble a mixture of your favorite toppings before you turn in for the night if you're always running late in the morning like I am.

Go to bed. :)

Wake up to creamy, yummy oatmeal! Top with your favorites, plus brown sugar and cream or milk if you choose, and dig in. Bon appetit! This recipe will serve four generously.

Planning a brunch? (I hear they're all the rage.) This would be a great healthful menu option. Just prepare the toppings in separate bowls allow your guests to create their own dish.

Still too hot for this where you live? Or maybe you have leftovers? Try this swiss-style. Just mix cold (prepared) oatmeal with yogurt, fruit and nuts. Nummers!
